Coffee Love AND looks like a kitty had to get in on the shot!
I love Caffino, its a small stand alone coffee shop in Half Moon Bay, I have never even been to the Starbucks here, Caffino is so YUMMY!
Red Wine, Rosemary and Olive Oil Marinated Rack of Lamb
I have made this dish several times and all I can say is its AMAZING!
Marinade:
4 Fresh Rosemary sprigs
2 C. Red Wine
Chopped Garlic to taste (we like a lot)
4 T. Olive Oil
Salt and pepper to taste
Mix all the above, pour over lamb, cover and marinate 2 hrs. minimum, all day is preferable.
Preheat oven to 375
The most important part is making sure you sear in all the juices from the lamb, use a heavy non stick pan, on high eat cook lamb aprox. 4 min. each side and with a pair of tongs sear each end. Place seared rack of lamb in shallow baking dish and cook uncovered for 30-45 minutes, this is a main course that will blow your family/guests away! I serve it with a spinach salad, mashed potatoes and steamed carrots...YUMMY
