Chinese Soup with Baby Bok Choi

This yummy soup was a last minute addition to a wonderful dinner!  I purchased a bag of amazing baby bok choi at the Asian market and this simple soup came to mind, easy ingredients, quick to make and super healthy!  
          I buy this chicken stock from Costco and LOVE it, I have yet to find another one that is both flavorful and lower in Sodium, this is a staple in my pantry!


5 cups chicken or veggie stock
6 baby bok choi
1/2 tsp. Chinese five spice
splash soy sauce
red pepper flakes to taste
salt to taste
Heat chicken stop to boiling, reduce heat, add bok choi, five spice, soy sauce, red pepper flakes and salt, simmer for 15 minutes and enjoy!  I had left overs and added a egg for egg drop soup for lunch the next day, it was delicious.  :)
